How to make health mix kanji that never goes lumpy
Lumps are not your fault and not the powder's fault — they are a temperature problem. Here is the two-minute method that fixes it permanently.
Almost everyone makes the same mistake the first time: spoon the powder straight into hot milk. The outside of every clump cooks instantly, seals itself, and traps dry powder inside. No amount of stirring will rescue it after that.
The rule
Starch must meet cold liquid before it meets heat. Always.
The method that works every time
- Put 2 tablespoons (about 20 g) of the mix in a steel tumbler.
- Add 3-4 tablespoons of cold water. Not warm. Cold.
- Whisk with a fork for about twenty seconds until it looks like thin batter with no dry specks.
- Now add the rest of your 150-200 ml of water or milk, hot, in a steady stream, stirring the whole time.
- Cook on a low to medium flame for 7-10 minutes, stirring continuously.
It is ready when it thickens slightly and starts to smell nutty. That smell is the signal.
If it is still lumpy
Two likely reasons. Either the paste was not smooth before the hot liquid went in — go back and whisk longer — or the flame was too high and the bottom cooked before the top. Low and slow.
Getting the thickness right
It keeps thickening as it cools, so take it off the heat while it still looks slightly thin. For a child, aim for something that pours off a spoon. For a filling adult breakfast, let it get almost spoonable.
Sweetening it
Add jaggery after you turn off the flame. Jaggery added while it is boiling can occasionally split milk. And add a pinch of salt alongside the sweetener — it makes the whole glass taste rounder, and it is the tip most people write back to us about.
The savoury version
Cook it with a pinch of salt instead, cool it completely, then whisk in buttermilk with chopped shallots, green chilli and a curry leaf. In hot weather this is better than the sweet version, and most people never think to try it.
