We went back to the mill

Nourish your family, the way home food should be made. Not as a slogan — as a method. Forty ingredients, each roasted on its own, cooled right down before grinding, zip-sealed the same day, with a packing date that tells you the truth about how fresh it is.

It started with a disappointing packet

Growing up, health mix was not something you bought — it was something you had made. You took your own ragi, wheat, chana and groundnuts to the mill down the road, waited your turn, and carried home a warm paper packet that smelled of roasted grain for days.

When we finally bought a branded pack from a supermarket shelf, it was pale, faintly sweet and smelled of nothing at all. The first two ingredients on the label were rice flour and sugar. That was the moment this became a project.

We spent the better part of a year getting it wrong. Roasting everything together, and finding out that ragi burns while chana is still raw. Trying a fast steel mill, and losing all the aroma to the heat. Making a thirty-ingredient blend that tasted of nothing because nothing was in it in a meaningful quantity.

What worked, in the end, was the old way, done patiently. Buy small quantities of good grain. Roast each ingredient on its own, by smell rather than by timer. Let everything cool right down before grinding — the step almost everyone skips. Zip-seal the same day and print the packing date, because that is the number that actually matters and almost nobody prints it.

What we will never do

  • Add sugar, and then call it “no added sugar” because we used maltodextrin instead.
  • Say forty ingredients on the front and list twenty at trace levels on the back.
  • Claim a food cures anything. It is breakfast, not medicine.
  • Hide the packing date, or bury it in a code you cannot read.
  • Invent customer reviews. Ours will be real or there will be none.

Our process

Four steps, none of them shortcuts

Health mix is a simple product made badly by almost everyone. Here is exactly what we do differently, in the order it happens.

  1. 01

    Forty ingredients, bought small

    Seven millets, ten pulses, whole grains, four heritage Tamil rice varieties, nuts and seeds. Bought in small quantities and often, rather than a year's stock at once, so nothing sits around losing its oils.

  2. 02

    Roasted one grain at a time

    Ragi needs five minutes; chickpea needs fifteen. Roast forty ingredients together and half of it is raw while the rest burns. Each one is roasted on its own, by smell rather than by timer.

  3. 03

    Cooled completely, then ground

    Everything is left to cool right down before it is ground. Grinding while warm makes the powder pasty and shortens its life -- it is the step most people skip, and skipping it is why some mixes taste flat.

  4. 04

    Zip-sealed the same day

    Ground grain begins to go stale from the moment it is made. Batches are small, zip-sealed the same day, and dispatched within two days, with the packing date on every pouch.
